Quantity good for 3-4 People

Ingredients:

  • Cooked long grain rice – 3 cups
  • Butter – 2 tbsps
  • Onion – 1/2 cup, finely chopped
  • Ginger – 2 tsp, chopped
  • Garlic – 2 tsp, chopped
  • Green chilli – 1 tsp, finely chopped
  • Capsicum – 1/4 cup, chopped
  • Tomato – 1/2 cup, chopped
  • Green Peas – 1/4 cup
  • Carrots – 1/4 cup, chopped
  • Beans – 1/4 cup, chopped

Spices:

  • Turmeric powder – 1/2 tsp
  • Red chilli powder – 1/2 tsp
  • Pav bhaji masala – 2 tbsp
  • Cumin seeds – 1 tsp
  • Salt, as per taste

For Garnish:

  • Lemon Juice – 2 tsp
  • Fresh Coriander leaves – 2 tbsp

Preparation:

  1. In a pan, over medium flame, heat water. Add peas, carrots & beans and cook till softened.
  2. Once done, drain & keep it aside.
  3. In a tawa or a kadai, heat butter. Once heated, lower the flame a little and add cumin seeds (let them crackle for a while).
  4. Over low-medium flame, add onion, ginger, garlic & green chilli and fry until onion turns transparent.
  5. Add the chopped tomatoes & capsicum and fry for about 3-4 minutes.
  6. Lower the flame and add turmeric powder, red chilli powder, pav bhaji masala and salt & cook for 2-3 minutes. If required, add little water.
  7. Ensure to mix & mash well the masala while cooking.
  8. Now, to this mixture add the boiled vegetables, cooked rice & mix well. Let it cook for few minutes.
  9. Turn off the flame and add the lemon juice & fresh coriander leaves. Mix well & transfer to the serving bowl.
  10. Serve it hot with onion tomato raita, mint chutney & papad.
