Bay Leaf

  • Ground / Powdered

You can use a coffee grinder to grind the bay leaves. Do not forget to use a fine mesh strainer and strain the dust.

  • Syrup

Chop some ginger and add it along with sugar (1 tsp) to a saucepan. Add water (2 cups),bring it to boil. Make sure to keep stirring till the sugar dissolves. Add the bay leaf, simmer over medium heat, until the mixture thickens & reduces to about 1 1/2 cup. Add some lemon juice.

  • Whole Dry Bay Leaf

Go with dried bay leaves over fresh ones for culinary use. That is because the fresh ones have a minty flavor, which does not go well with many ingredients. Always ensure to remove the leaf before serving.

SPICE ADVICE:

Taking the whole leaf is unsafe, as it remains intact while passing through the digestive system.
