Nutmeg

  • Ground / Powdered

    Take a whole nutmeg, crack the shell open by smashing it with a pestle. Peel away the shell completely from the nutmeg. Using a fine grater (microplane grater) grate the seed into a fine powder.

  • Syrup

    In a saucepan add water ( 1 cup), brown sugar (1 cup) and nutmeg (2 - cut open in half) and allow it to simmer (do not boil completely) for about 30 minutes (its ready when the back of your spoon is coated with it). Once its done, turn off the heat and let the syrup cool down. Transfer into an air tight glass container and refrigerate.

SPICE ADVICE:

Use Nutmeg powder in small / as directed quantity as it is so strongly flavored, only a small amount is needed to impart a large amount of flavor.
