Quantity good for 3-4 People

Ingredients:

  • Paneer / cottage cheese – 250 gm, cut in medium size pieces
  • Cooking oil – 1/4 cup
  • Coal – 1 piece (to give a little smokey flavor)
  • Garam Masala – 1/4tsp
  • Cumin seeds (jeera) – 1/4 tsp
  • Clove – 4 pc
  • Cinnamon stick – 1/2 inch
  • Star Anees – 1
  • Green cardamom – 3
  • Black cardamom – 2
  • Black Pepper whole – 6 pc

For Garnish:

  • Fresh coriander leaves – chopped

For Paneer Marination: 

  • Ginger-garlic & chilli paste – 1 tsp
  • Onion – 1 big, paste form
  • Fresh Cream – 1tbsp
  • Black pepper – 1/4 tsp powdered
  • Coriander powder – 1 tsp
  • White pepper – 1/4 tsp, powdered
  • Salt – as per taste
  • Dry fenugreek leaves (kasuri methi) – 1 tsp

Preparation:

  1. In a large mixing bowl, mix the paneer cubes with the ingredients listed above under marination. Cover and keep for approximately 25-30 minutes.
  2. After 30 minutes, over medium heat, heat up a pan with the cooking oil. Once heated fry the paneer cubes lightly, remove and keep aside.
  3. Using the same cooking pan, over low-medium heat, add the leftover marination and stir fry for few seconds. Then add the coriander leaves and garam masala and stir.
  4. Then add the fried paneer cubes and mix well. Turn off the heat once it is well done and remove from stove.
  5. On the flame, very carefully burn the coal a little (till you get the aroma) and using a small piece of foil, place it in the pan and cover for few seconds.
  6. Remove the foil with the coal piece and garnish the curry with the chopped fresh coriander leaves.
  7. Serve with rice, roti or paratha.
